Family Meal Plan – Week of May 21

This weekend’s meal planning was a little haphazard — we tried to squeeze too much into our Sunday — but I think we’re pleased with it overall.

We went to the strawberry festival at the Franklin Farmer’s Market on Saturday and already had two pints in the fridge from our CSA, so we’ve definitely got strawberries on our minds. I think our biggest challenge will be eating up all of the greens in our fridge! My lunch salad will be mixed CSA greens with strawberries, blueberries, goat cheese, & peach balsamic. I made strawberry ice cream – I’m hoping to make more ice cream sandwiches.

Here is our dinner menu:

Sunday – Not our best. Snacks all afternoon and cereal for dinner. Giving ourselves a little grace — it happens everyone.

Monday: Lemon Fettuccine with Broccoli and Ham

Tuesday: (Mildly) Spicy Chicken with Shrimp and Bok Choy. We did not like the bok choy wilted in last week’s recipe, so we’re trying something new.

Wednesday: Grilled Red Snapper with a Fresh Citrus Salad. Forgot we had snapper in the freezer!

Thursday: Roasted asparagus and risotto.

Friday: Family night out! We usually go out to eat after work and take M to one of our favorite bookstores to pick out a book.

Saturday: Grilled whole chicken, salad. What do you do with all of your CSA greens? Salad all week??
