Family Meal Plan: Week of August 4

Happy Monday, friends!

I hope you had a great weekend. Here in Tennessee, our school kids headed back to class today, so many of us were prepping for that — shopping for school supplies and wrapping our minds around the fall schedule. I always love back-to-school — new school supplies, especially. I almost bought a new backpack for Mackenzie, just because. We bought her new shoes instead. That girl is growing like crazy.

We’re still getting back in the groove of things coming back from vacation. I’m excited about getting our meal plan back in place and bringing some structure back to our weeknights. Mackenzie has a short week at school due to teacher in-service in prep for the new school year, so her lunches this week will be easy. Chris is staying home with her, and I have a feeling lunches and snacks will include chips and Chris’s homemade salsa, served with chocolate milk if Mackenzie can convince him.

Wednesday, August 7: Peach and Roasted Vegetable Salad, Peach Brown Butter Buckle for dessert

Thursday, August 8: Stir-fry with Chinese Brown Sauce

Friday, August 9: Cooking through Portland

Saturday, August 10: Barbecue Glazed Pork Shoulder Butt & Beer
